Try this delicious Paneer fajitas for a healthy and fibre rich recipe option for those vegetarians planning to add some protein in their diet. It is a must try for those keen on weight loss and a good alternative for those suffering from diabetes as well.

PANEER FAJITAS

Serves 2

INGREDIENTS

Cubed  panner 1/2 cup 80g
Lemon juice 1 whole lemon
Red chilli flakes 1 Tbsp
Mustard powder ½ tsp
Sesame seeds 1 Tbsp 15g
Dried parsley ¼ tsp
Olive oil ½ Tbsp 8g
Salt To taste
For Salad:
Finely sliced onion 1 no 50g
Finely sliced capsicum ½ cup 50g
Finely sliced tomatoes ½ cup 50g
Finely chopped cabbage ½  cup
Boiled green peas Fistful 15g
Boiled sweet corn Fistful 15g
Fresh parsley For garnish
Ground pepper To taste
Salt To taste

Method:

  • Marinate the paneer cubes with lemon juice, olive oil, cumin powder, mustard powder and dry parsley and salt for 30 mins.
  • Combine sesame seeds and chilli flakes in a small bowl. Coat both the sides of the paneer in this and place them on a greased baking tray or a grill.
  • Grill the paneer in a pre-heated oven for 10 mins, till the paneer attains a light brown shade
  • Sauté the vegetables for salad, season with salt, arrange on a serving plate, sprinkle some parsley on top and place the grilled paneer fajitas on the salad. Serve hot with salsa.
